Gluten Free Scandi Crackers
The easiest crackers you’ll ever come across - and you’ll be wanting to make them on repeat. I’m a very much to-the-point person, so you won’t find a long essay before arriving to the recipe here. Just a few notes on nutrition.
These crackers are gluten free (for those who cares) and only contains natural, wholesome ingredients. I’m a clean eater. I eat to fuel my body with good stuff. And these crackers are good stuff. All right, here we go.
Ingredients
250 ml boiling water
100 ml brown rice flower
100 ml corn flower
200 ml mixed seeds of your liking (sunflower, flax, hemp, chia, pumpkin etc)
40 ml olive oil
A pinch of salt
1 tbsp fennel seeds (optional)
How to
Preheat oven to 300 F. Mix all dry ingredients in a medium sized bowl. Add boiling water and olive oil. Mix together. Spread out on a parchment paper lined baking sheet using a spatula. You want it to be fairly thin (depending on if you like thin or thick crackers, I suppose). Bake for 45 - 60 min. It should have gotten a nice golden colour and have dried out. Let cool for a few minutes and then break into desired size pieces. Done!
